Method
Waffle batter
In a medium bowl whisk together 1 cup all-purpose flour, 1 tsp sugar, 1 tsp baking powder and a pinch of salt until evenly combined.
In a separate small bowl or measuring cup whisk together the liquids: 3 tbsp milk + 3 tbsp additional milk (total 6 tbsp, or 3/8 cup), 1 whole egg, 1 tbsp melted butter and 1 tsp vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and stir gently until just combined. The batter should be slightly lumpy but homogenous; do not overmix. If batter seems too thick, add up to 1–2 tbsp additional milk to reach a pourable but thick consistency.
Lightly spoon or pour the appropriate amount of batter into the preheated waffle iron (follow your iron's portion size). Close and cook until waffles are golden and cooked through, about 3–5 minutes depending on iron. Remove and keep warm on a wire rack. Makes 2 small kid-size waffles (adjust quantity for more).
Mixed berry compote
In a small saucepan combine 1 cup mixed berries, 1 tbsp granulated sugar, 1 tsp lemon juice and 1 tbsp water.
Cook over medium heat, stirring occasionally, until the berries begin to break down and the mixture thickens slightly, about 4–6 minutes. Use the back of a spoon to gently mash a few berries for a chunky compote suitable for kids. If it becomes too thick, add a splash of water.
Remove from heat and let cool for 2–3 minutes. The compote will thicken a bit more as it cools.
Vanilla whip
Chill a small bowl and whisk (or use a small hand mixer) briefly if available. Pour 1 tbsp cold heavy cream into the bowl.
Add 1 tsp powdered sugar and 1 tsp vanilla extract. Whisk by hand vigorously for 30–60 seconds until soft peaks form. For a very small quantity, whisking by hand works best; do not overwhip. If you prefer a thicker dollop, add another 1 tsp cream and whisk a few more seconds.
To serve / finishing
Place kid-size waffles on a plate. Spoon 2–3 tablespoons of warm mixed berry compote over each waffle.
Top each waffle with a generous dollop of vanilla whip (about 1 tbsp). If desired, serve with 1–2 tbsp maple syrup on the side for dipping.
Let waffles cool to a safe temperature for children before serving. Serve immediately.
