Smashed Potatoes

Boil potatoes

Place the baby potatoes in a medium pot and cover with cold water. Add a pinch of salt. Bring to a boil over high heat, then reduce to a simmer and cook until tender when pierced with a fork, about 10–12 minutes depending on size.

Drain and smash

Drain the potatoes and return them to the pot or a shallow bowl. Using the back of a fork or a potato masher, gently smash each potato to about 1/2-inch thickness — keep them slightly chunky so they hold together.

Pan-fry smashed potatoes

Heat 1 tablespoon olive oil and 1 tablespoon butter in a nonstick or heavy skillet over medium-high heat. Add the smashed potatoes in a single layer (work in batches if needed). Cook undisturbed until the bottoms are golden and crisp, about 3–4 minutes. Flip and crisp the other side another 2–3 minutes. Season with 1/2 teaspoon salt, 1/4 teaspoon black pepper, and sprinkle chopped parsley. Keep warm on low heat or in a warm oven (about 200°F / 95°C) while you finish the rest.

Bacon

Cook bacon

While potatoes are boiling, cook the bacon. Heat a skillet over medium heat and add the bacon strips in a single layer. Cook, turning occasionally, until edges are crisp and fat rendered, about 6–8 minutes depending on thickness. For chewier bacon, cook less time; for crispier, cook a bit longer. Transfer to a paper towel-lined plate to drain. Keep warm with the potatoes.

Cook egg any style

Choose the egg style: fry, scrambled, or soft-boiled. For a fried egg: heat 1/2 tablespoon butter in a small nonstick skillet over medium-low heat. Crack the egg into the pan, season with a pinch of salt and a small grind of pepper, and cook until the white is set and edges are slightly crisp, about 2–3 minutes for sunny-side up; cover for 30–45 seconds if you prefer the yolk more set. For scrambled: whisk the egg with a pinch of salt, melt butter, pour egg into pan and gently stir until softly set, about 1–2 minutes. For soft-boiled: place the egg in simmering water for 6–7 minutes, then cool briefly under cold water and peel.

Toast

Toast and butter

While the egg finishes, toast 1 slice of bread to desired doneness in a toaster or in a skillet. Spread 1/2 tablespoon butter on the warm toast.

Fresh Fruit

Prepare fruit

Wash and slice fruit as needed. Place about 1 cup of mixed fresh fruit in a small bowl and drizzle with 1 teaspoon honey or maple syrup if desired.

Plating & Serve

Assemble the plate: place the smashed potatoes (about half the batch for a child) on the plate, add the cooked bacon strips, set the egg beside them, and place the toast and fruit bowl on the side. Serve immediately while warm.
