Chocolate Cake

Prepare and preheat

Preheat oven to 350°F (175°C). Grease two 8-inch round cake pans and line bottoms with parchment. Lightly flour pans or coat with cocoa powder to prevent sticking.

Combine dry ingredients

In a large bowl, whisk together 2.25 cups flour, 2 cups granulated sugar, 0.75 cup cocoa powder, 1.5 tsp baking powder, 1.5 tsp baking soda, and 1 tsp salt until evenly combined.

Combine wet ingredients

In a separate bowl, whisk 2 eggs, 1 cup buttermilk, 0.5 cup vegetable oil and 2 tsp vanilla until smooth.

Mix batter

Add the wet mixture to the dry ingredients and mix on low until incorporated. Gradually stir in 1 cup hot coffee until batter is smooth and slightly thin — the hot coffee blooms the cocoa and yields a moist cake. Scrape bowl and divide batter evenly between the two prepared pans (about 1¼–1½ cups batter per pan depending on pan depth).

Bake

Bake in preheated 350°F (175°C) oven for 28–34 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Rotate pans halfway through for even baking.

Cool

Allow cakes to cool in pans on a wire rack for 10–15 minutes. Run a knife around edges, invert onto rack, remove parchment, and cool completely before assembly (at least 1 hour).

Chocolate Ganache

Heat cream

Place 1 cup heavy cream in a small saucepan and bring just to a simmer (do not boil).

Make ganache

Place 10 oz chopped semisweet chocolate in a heatproof bowl. Pour the hot cream over the chocolate, let sit 1–2 minutes, then gently whisk from the center until smooth and glossy. Stir in 2 tbsp unsalted butter until incorporated. If ganache is warm and pourable it can be used as filling; allow to cool to spreadable consistency (about 20–30 minutes at room temperature) or refrigerate and stir occasionally until spreadable.

Vanilla Whip

Chill equipment

Chill mixing bowl and whisk or paddle for 10–15 minutes in the fridge — cold equipment helps whipping.

Whip cream

Combine 2 cups heavy cream, 0.25 cup powdered sugar, 1 tsp vanilla extract and 0.25 tsp vanilla bean paste (if using) in chilled bowl. Whip on medium-high speed until soft peaks form for a light whip, or until medium peaks if you prefer a firmer filling. Do not overwhip.

Hold

Keep the whipped cream chilled until ready to assemble. If it softens, briefly re-whip to restore texture.

Pumpkin Seed Brittle & Garnish

Prepare pan

Line a small baking sheet or rimmed tray with parchment or a silicone mat and lightly butter or oil the liner so brittle releases easily.

Cook sugar

In a medium heavy-bottomed saucepan, combine 0.5 cup granulated sugar, 2 tbsp light corn syrup, and 2 tbsp water. Stir gently to moisten the sugar and bring to a boil over medium heat without stirring. Use a wet pastry brush to wash down any sugar crystals on the sides. Continue cooking until syrup reaches 300°F (hard crack) or until it turns an amber color (about 6–8 minutes).

Add seeds and finish

Immediately remove from heat and stir in 0.75 cup raw pumpkin seeds, 1 tbsp unsalted butter and 0.25 tsp fine salt until seeds are coated and mixture is glossy. Quickly pour and spread the mixture thinly on the prepared sheet. Let cool completely (10–20 minutes) and then break into irregular shards. Store airtight if making ahead.

Finish & Assembly

Optional simple syrup

If using, combine 0.25 cup simple syrup with 2 tbsp espresso or strong coffee. Lightly brush each cake layer top with this syrup to add moisture and a flavor boost.

Level layers

If cake domes have formed, level each layer with a serrated knife so they stack evenly.

First layer

Place one cake layer on your serving plate or cake board. Spread a thin layer (about 3/4 cup) of cooled chocolate ganache over the top, leaving a small margin at the edge to prevent spilling.

Middle filling

Pipe or dollop about half of the vanilla whip (roughly 1 to 1¼ cups) over the ganache and smooth to the edges. The whipped cream will provide a light contrast to the dense ganache.

Second layer and top

Gently set the second cake layer on top. Press lightly to settle. Spread a thin crumb coat of ganache or a thin smear of whipped cream around the sides to lock crumbs. Chill for 15–20 minutes to set the coat.

Final decoration

Apply a final, even layer of the remaining vanilla whip on top and around sides as desired, or leave sides lightly coated and add a glossy pour of leftover ganache over the center to create a ganache pool. Break pumpkin seed brittle into shards and arrange on top and around the base for crunch and visual contrast. Optionally scatter a few extra toasted pumpkin seeds.

Serve

Keep cake chilled until serving. Slice with a clean, hot knife for neat slices: heat knife under hot water, dry, then slice; repeat between slices. Store leftovers covered in the refrigerator for up to 3 days (whipped cream will soften over time).
