Method
Prep
Make Watermelon Purée
Place the roughly cubed watermelon (about 3 oz) into a blender or food processor. Pulse until smooth, about 10–15 seconds. If the purée seems very watery, you can press it through a fine mesh strainer to remove excess pulp for a silkier texture (reserve about 1 oz of purée for the cocktail).
Measure 1.5 oz of the watermelon purée to use in the cocktail. Discard or save extra purée for another use.
Build & Shake
In a cocktail shaker, add the blanco tequila (2 oz), spicy tequila (1 oz), fresh lime juice (0.75 oz), agave nectar (0.5 oz), and the measured watermelon purée (1.5 oz).
Fill the shaker with ice (about 1 cup) and shake vigorously for 12–15 seconds until the shaker is cold to the touch. Shaking chills and dilutes the drink slightly for balance.
Strain & Finish
If you prefer a shorter, stronger cocktail: double-strain the contents into the prepared chilled rocks glass over fresh ice. If you prefer a longer, lighter cocktail: strain into the glass over fresh ice and top with 1.5 oz cold water or club soda, gently stir once to combine.
Garnish with the lime wheel and a small watermelon wedge or skewer. Serve immediately.
