Prepare honey syrup

If you don't have honey syrup ready, combine equal parts honey and hot water (1:1) and stir until fully dissolved. Cool before using. Use 0.75 oz for this cocktail.

Prepare the glass: run a lemon wedge around the rim of a highball or Collins glass. Brush 0.5 tsp honey on the rim where the lemon touched, then dip the rim lightly into the coarse flaky sea salt so a thin, even salted edge adheres. Set glass aside.

In a cocktail shaker, add 2 oz Nantucket grapefruit vodka, 0.75 oz fresh lemon juice, 0.75 oz honey syrup, and a handful of ice (about 4-6 large cubes).

Shake vigorously for about 10–12 seconds until the shaker is well chilled and slightly frosted.

Fill the prepared glass with fresh ice (about 1 cup). Strain the shaken mixture into the glass over the ice.

Top with 2 oz club soda to give a light effervescence. Stir gently once with a bar spoon to combine without flattening the soda.

Garnish & Finish

Garnish with a lemon wheel on the rim or floated on top. Finish with a very light pinch (about 1/8–1/4 tsp) of flaky sea salt sprinkled over the drink to accent the honey and grapefruit flavors.

Serve immediately with a straw or sip directly to enjoy the interplay of salted honey, bright lemon, grapefruit vodka and bubbly soda.
