Cook tater tots
Preheat oven to 425°F (220°C) if baking. Toss frozen tater tots with 2 tbs neutral oil, 1/2 tsp salt and 1/4 tsp black pepper on a rimmed baking sheet in a single layer. Bake 18–22 minutes, turning once halfway, until golden and crisp. Alternatively, deep-fry or air-fry according to package instructions until crisp. Keep warm.
Smash Patties
Portion beef
Divide 1 lb ground beef into two equal balls (about 8 oz each) for two smash patties. Do not overwork the meat; handle gently.
Smash and sear
Place one meat ball on the hot surface, then immediately press down firmly with a spatula or a heavy press to form a thin patty (~1/4 inch). Season the exposed top with 1/4 tsp kosher salt and 1/4 tsp black pepper. Cook 2–3 minutes without moving until deeply browned and edges crisp. Flip and immediately season the cooked side with another 1/8–1/4 tsp salt. Top with 1 slice American cheese and cook 30–60 seconds until cheese melts and patty is cooked through. Repeat for second patty.
Rest patties
Transfer patties to a plate and let rest 1–2 minutes to settle juices.
Chomp Sauce
Make sauce
In a small bowl combine 1/4 cup mayonnaise, 2 tbs ketchup, 1 tsp yellow mustard, 1 tsp pickle brine (or 1 tsp finely chopped pickle), 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/4 tsp paprika and 1/2 tsp hot sauce if using. Whisk until smooth. Taste and adjust seasoning or acidity (add more pickle brine or a squeeze of lemon if desired). Refrigerate briefly.
