Base & Vegetables

Method

Base & Vegetables

1

Prepare vegetables

Wash and dry lettuce, then shred or finely chop into bite-sized pieces until you have about 4 cups. Finely dice 1/2 cup yellow onion. Chop dill pickle slices into roughly 1 cup. Place all in a bowl and refrigerate while preparing other components.

Tots

2

Cook tater tots

Preheat oven to 425°F (220°C) if baking. Toss frozen tater tots with 2 tbs neutral oil, 1/2 tsp salt and 1/4 tsp black pepper on a rimmed baking sheet in a single layer. Bake 18–22 minutes, turning once halfway, until golden and crisp. Alternatively, deep-fry or air-fry according to package instructions until crisp. Keep warm.

Smash Patties

3

Portion beef

Divide 1 lb ground beef into two equal balls (about 8 oz each) for two smash patties. Do not overwork the meat; handle gently.

4

Preheat griddle or skillet

Heat a heavy skillet or griddle over high heat until very hot. Brush with 1 tsp vegetable oil to lightly coat.

5

Smash and sear

Place one meat ball on the hot surface, then immediately press down firmly with a spatula or a heavy press to form a thin patty (~1/4 inch). Season the exposed top with 1/4 tsp kosher salt and 1/4 tsp black pepper. Cook 2–3 minutes without moving until deeply browned and edges crisp. Flip and immediately season the cooked side with another 1/8–1/4 tsp salt. Top with 1 slice American cheese and cook 30–60 seconds until cheese melts and patty is cooked through. Repeat for second patty.

6

Rest patties

Transfer patties to a plate and let rest 1–2 minutes to settle juices.

Chomp Sauce

7

Make sauce

In a small bowl combine 1/4 cup mayonnaise, 2 tbs ketchup, 1 tsp yellow mustard, 1 tsp pickle brine (or 1 tsp finely chopped pickle), 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/4 tsp paprika and 1/2 tsp hot sauce if using. Whisk until smooth. Taste and adjust seasoning or acidity (add more pickle brine or a squeeze of lemon if desired). Refrigerate briefly.

Assembly

8

Build the bowl

Divide shredded lettuce evenly between two bowls (about 2 cups per bowl). Arrange half of the chopped pickles (1/2 cup) and half of the diced onion (1/4 cup) over each bowl.

9

Add tots and patties

Place 8 crisp tater tots (or 1/2 of the cooked tots) on each bowl. Place one American smash patty on top of the tots or beside them in each bowl.

10

Dress and finish

Drizzle 2 tbs chomp sauce over each bowl (or more to taste). Garnish with pickled jalapeños and chopped chives if using. Finish with an extra grind of black pepper or a light sprinkle of flaky salt.
