Dough

Method

Dough

  1. 1

    Preheat and prepare

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

  2. 2

    Combine dry ingredients

In a large bowl, whisk together 3 cups all-purpose flour, 2 teaspoons baking powder, 1 tablespoon granulated sugar, and 1/2 teaspoon salt until evenly distributed.

  3. 3

    Cut in butter

Cut 6 tablespoons cold unsalted butter into small cubes. Using a pastry cutter, two forks, or your fingertips, work the butter into the flour mixture until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining (this creates flakiness).

  4. 4

    Mix wet ingredients

Whisk together 3/4 cup whole milk, 1 large egg, and 1 teaspoon vanilla extract in a small bowl until combined.

  5. 5

    Form dough

Make a well in the center of the dry ingredients and pour the milk-egg mixture in. Stir gently with a spatula or wooden spoon just until the dough comes together. Do not overmix; the dough should be slightly shaggy but cohesive. If dough is very dry, add up to 1-2 tablespoons additional milk.

  6. 6

    Turn out and shape

Turn the dough out onto a lightly floured surface. Gently knead 4–6 times to bring it fully together. Pat or roll the dough to about 3/4-inch (2 cm) thickness. Using a 2 1/2–3 inch round biscuit cutter (or a knife to cut 10 equal pieces), cut 10 rounds. Press straight down without twisting to help the biscuits rise evenly. Re-roll scraps once as needed to reach 10 pieces.

Baking & Finishing

  1. 7

    Arrange on pan

Place the 10 biscuits on the prepared baking sheet about 1 inch apart for slightly crisp edges, or touching for softer sides.

  2. 8

    Brush and sugar

Brush the tops lightly with 2 tablespoons melted butter and sprinkle with 1 teaspoon extra granulated sugar or coarse/sanding sugar if using.

  3. 9

    Bake

Bake in the preheated 425°F (220°C) oven for 12–15 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean. Rotate the pan halfway through baking if your oven has hot spots.

  4. 10

    Finish

Remove from oven and immediately brush tops again with a little extra melted butter, if desired, for sheen and flavor. Allow biscuits to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool slightly.

  5. 11

    Optional dusting

If desired, dust with 1 tablespoon powdered sugar before serving for a sweeter presentation.
