Preheat and prepare

Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly oil it to prevent sticking.

Wash and cut

Wash and scrub the sweet potatoes thoroughly. Peel if you prefer (peeling is optional). Cut the sweet potatoes into 1-inch (2.5 cm) cubes for even roasting. Try to keep pieces uniform in size.

Season

Place the cut sweet potatoes in a large bowl. Add the olive oil, kosher salt, black pepper, smoked paprika, and garlic powder. If using, finely chop the fresh rosemary and add it to the bowl. Toss well until every piece is lightly and evenly coated.

Arrange on baking sheet

Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet. Make sure pieces are not overcrowded — leave small gaps so they roast rather than steam.

Roast

Roast in the preheated oven for 25–35 minutes, flipping once halfway through (about at 12–15 minutes). Roast until potatoes are golden at the edges and fork-tender in the center. Smaller cubes may finish closer to 25 minutes; larger pieces may need up to 35 minutes.

Finish and serve

Remove from oven. If using, drizzle the roasted sweet potatoes with the maple syrup and gently toss to glaze. Taste and adjust seasoning with additional salt or pepper if needed. Serve hot as a side.
