Make simple syrup

Combine granulated sugar and 1 cup cold water in a small saucepan. Heat over low heat, stirring constantly just until sugar dissolves completely (do not boil). Remove from heat and cool to room temperature, about 10 minutes. (If short on time, dissolve sugar in 1/2 cup warm water, then add remaining 1/2 cup cold water to cool.)

Juice lemons

While the syrup cools, juice fresh lemons until you have 1 cup of lemon juice. Strain seeds and pulp through a fine mesh sieve for a smooth texture, if desired.

Assemble lemonade

In a 2‑quart pitcher, combine the cooled simple syrup and 1 cup fresh lemon juice. Add 3 cups cold water and stir thoroughly. Taste and adjust: add up to 1/2 cup more water if too tart, or an extra tablespoon or two of simple syrup if too tart for your taste.

Chill and serve

Fill serving glasses with ice cubes. Pour lemonade over ice, garnish each glass with a lemon slice and an optional mint sprig. Serve immediately, or refrigerate the pitcher for up to 3 days. Stir gently before pouring if separated.
