Prepare bread and cheese
If using mayonnaise, spread it thinly and evenly on one side of each bread slice. Place the American cheese slice on the un-mayo side of one bread slice. If adding extra grated cheddar, sprinkle it lightly over the American cheese so it melts into the sandwich.
Butter the bread
Spread the unsalted butter evenly on the outer sides of both bread slices (the sides that will contact the pan). Use softened butter or room-temperature butter for an even layer; this yields a golden-brown crust when cooked.
Cook the sandwich
Heat a nonstick skillet or griddle over medium-low to medium heat (about 275–325°F / 135–160°C). Place the sandwich in the skillet, buttered side down. Cook for 2 to 3 minutes until the bottom is golden brown and the cheese begins to soften. Flip carefully with a spatula and cook the other side for another 2 to 3 minutes until golden brown and the cheese is fully melted. Lower the heat slightly if the bread is browning too fast before the cheese melts.
Finish and serve
Remove the sandwich from the pan and let rest for 30 seconds to 1 minute so the cheese settles. Cut the sandwich diagonally or down the middle, according to preference. Serve warm.
