Simmer (optional, for juicier brats)
Place bratwurst in a skillet or saucepan. Add 1 cup beer or chicken broth and 1 tsp oil. Bring to a gentle simmer over medium heat, cover, and simmer for 8–10 minutes until internal temperature approaches 150°F (65°C). Remove brats and pat dry.
Season the brats lightly with 1 tsp salt and 1/2 tsp black pepper. Place brats in the hot pan and sear, turning every 2–3 minutes, until well browned on all sides and internal temperature reaches 160°F (71°C), about 8–10 minutes total (longer if thicker). Remove and let rest 3 minutes.

Bread & Assembly
Split the rolls horizontally but keep one side attached if you prefer. Spread about 1 tsp Dijon mustard on the bottom half of each roll (or 4 tsp total divided).
Place one seared brat in each roll. Top each brat with a generous portion of sautéed onions and peppers (divide evenly). Add about 1/4 cup sauerkraut or 2 tbsp pickles if using, distributing evenly among sandwiches.
Serving & Finish
Serve immediately while hot. Provide extra mustard, pickles, or sauerkraut on the side. Leftover bratwurst can be refrigerated for up to 3 days and reheated gently.
