Prepare bananas

Peel and slice

Peel the bananas and slice each lengthwise in half (for shorter pieces, slice into 3–4 pieces each so they are about 3 inches long). If using whole halves, keep them intact. Place slices in a bowl.

Acidulate

Toss the banana pieces with the lemon juice to prevent browning and to add a slight brightness. Set aside while you prepare the breading station.

Make the breading & batter

Dry mix

In a shallow bowl or plate, whisk together the all-purpose flour, cornmeal (if using), granulated sugar, salt, and baking powder until evenly combined.

Wet mix

In a separate bowl, beat the eggs lightly, then whisk in the milk and vanilla extract (if using) until smooth.

Prepare breadcrumbs

Place the panko breadcrumbs in a third shallow dish or plate. If you prefer a finer crust, pulse panko briefly in a food processor to break slightly but not into powder.

Coat sequence

Working with one banana piece at a time: first dredge in the dry flour mixture, shaking off excess; then dip into the wet egg/milk mixture to fully coat; finally press into the panko breadcrumbs to adhere a generous, even layer. For an extra-thick crust, repeat the wet dip and panko step once more.

Rest before frying

Place the breaded banana pieces on a wire rack set over a sheet pan and let rest 5–10 minutes. This helps the coating adhere and reduces splatter when frying.

Fry

Heat oil

Pour the oil into a heavy-bottomed pot or deep skillet to a depth of about 2–3 inches (roughly 3–4 cups, depending on vessel). Heat over medium-high until the oil reaches 350°F (175°C). If you don't have a thermometer, test with a small breadcrumb — it should sizzle and turn golden in about 30–45 seconds.

Fry in batches

Carefully lower breaded banana pieces into the hot oil without overcrowding. Fry in batches for 2–3 minutes per side, turning once, until the crust is golden brown and crisp and the interior is soft and warmed through. Total cook time per piece ~4–6 minutes depending on size and ripeness.

Drain

Use a slotted spoon or spider to transfer fried bananas to a wire rack or paper towel–lined tray. Drain for a minute or two to remove excess oil.

Finish & serve

Dusting

While still warm, dust the fried bananas with powdered sugar and a light sprinkle of ground cinnamon if desired.

Serve immediately as a side or dessert: the exterior should be crisp and golden while the interior remains soft and moist. Leftovers can be gently reheated in a 350°F (175°C) oven for 6–8 minutes to re-crisp.
