Prepare cheese

Remove the coalho cheese from packaging and pat dry with paper towels. If using a single block, slice into 1/2" to 3/4" (1.2–1.9 cm) thick slabs so they hold together on the grill and develop a crisp exterior.

Season slabs

Lightly brush both sides of each cheese slab with about 1 teaspoon of oil. Sprinkle both sides evenly with coarse sea salt, freshly ground black pepper, and dried oregano if using. The oil helps prevent sticking and encourages browning.

Grill & finish

Preheat grill or skillet

Heat a charcoal grill, gas grill, or cast-iron skillet to medium-high heat (about 400–450°F / 200–230°C). If using a charcoal grill, let coals become white-hot and spread evenly; if using a skillet, add a thin film of oil and heat until shimmering but not smoking.

Grill cheese

Place the seasoned cheese slabs directly on the grill grates or in the hot skillet. Cook without moving for 2–3 minutes until the underside is golden brown and slightly crisp. Carefully flip with a spatula and cook the second side 1.5–3 minutes until it develops a similar golden crust and the interior becomes soft but not melted away. Total cook time will be about 4–6 minutes depending on thickness and heat.

Finish and serve

Transfer the grilled cheese to a serving plate. Immediately brush or drizzle the remaining oil over the hot slabs, squeeze fresh lime over them to taste, and sprinkle chopped parsley or cilantro if desired. Serve hot so the contrast between the crisp exterior and soft interior is enjoyed.
