Prepare Milk

In a large pot, heat the whole milk over medium heat until it reaches about 32°C (90°F). Stir gently to avoid scorching.

Add Citric Acid

Sprinkle the citric acid into the milk and stir for about 30 seconds until dissolved. Continue heating the milk to 43°C (110°F).

Add Rennet

Dilute rennet in a small amount of water and add it to the warm milk. Stir gently for about 30 seconds, then stop stirring and allow the milk to sit undisturbed for 5-10 minutes until it coagulates.

Cut the Curd

Once the curd has set, cut it into 1-inch cubes using a knife. Let it rest for 5 minutes.

Heat the Curd

Slowly heat the curds to 54°C (130°F) while gently stirring. This helps them firm up.

Drain the Whey

Using a slotted spoon, transfer the curds to a colander lined with cheesecloth. Let the whey drain for about 5 minutes.

Knead the Curds

Transfer the curds to a bowl and sprinkle with salt. Knead the curds with your hands until they become smooth and elastic.

Form the Mozzarella

Shape the kneaded curds into balls, about the size of a golf ball. Place the mozzarella balls in ice water to cool and firm up.

Store

After cooling, you can store the fresh mozzarella in a container with some whey or salted water in the refrigerator.
