Seasoned & topped with chipotle-pesto drizzle, cilantro, pico de gallo. Served with roasted asparagus.
Preheat the oven to 425°F (220°C). Trim the ends of the asparagus and place them on a baking sheet. Drizzle with olive oil and sprinkle with salt and black pepper. Toss to coat evenly.
Roast the asparagus in the preheated oven for about 15-20 minutes, or until tender and slightly crispy.
Season the sirloin steak on both sides with salt and black pepper. Heat a grill or skillet over medium-high heat. Cook the steak for about 3-4 minutes on each side for medium-rare, or until desired doneness.
Once the steak is cooked, remove it from the heat and let it rest for a few minutes. Drizzle the chipotle pesto over the top of the steak.
Slice the steak if desired and top with fresh cilantro and pico de gallo. Serve alongside the roasted asparagus.
