Seasoned & topped with chipotle-pesto drizzle, cilantro, pico de gallo. Served with roasted asparagus.
Preheat the oven to 400°F (200°C). Trim the ends of the asparagus and place them on a baking sheet. Drizzle with olive oil, and season with garlic powder, salt, and black pepper. Toss to coat.
Roast the asparagus in the preheated oven for about 15-20 minutes, or until tender and slightly crispy.
While the asparagus is roasting, season the sirloin steaks with salt and black pepper on both sides. Heat a grill or skillet over medium-high heat.
Cook the sirloin steaks for about 4-5 minutes per side for medium-rare, or until desired doneness is reached.
Remove the sirloin from the heat and let it rest for a couple of minutes. Drizzle chipotle pesto over the steaks, and top with fresh cilantro and pico de gallo. Serve alongside the roasted asparagus.
