Shrimp, penne in Alfredo sauce, topped with chile spices, Parmesan, tomatoes, green onions. Served with garlic toast.
Bring a large pot of salted water to a boil. Add penne pasta and cook according to package instructions until al dente. Drain and set aside.
In a large skillet over medium heat, add the shrimp. Season with chile powder, salt, and pepper to taste. Cook the shrimp until they turn pink and opaque, about 3-4 minutes. Remove from skillet and set aside.
In the same skillet, add the Alfredo sauce and bring to a simmer. Stir in diced tomatoes and half of the Parmesan cheese, mixing until well combined.
Add the cooked penne pasta and shrimp back into the skillet. Toss everything together until the pasta and shrimp are evenly coated with the sauce.
Plate the pasta and top with the remaining Parmesan cheese and chopped green onions. Serve with garlic toast on the side.
