Noodles & Prep

    Cook noodles

    Bring a large pot of water to a rolling boil. Add the noodles and cook according to package instructions until just tender (usually 4–7 minutes depending on noodle). Stir occasionally to prevent clumping.

    Reserve 1/4 cup of the noodle cooking water, then drain the noodles in a colander.

    Immediately transfer the drained noodles to a large bowl of ice water (or the 4 cups cold water listed) to stop cooking and cool completely, about 1–2 minutes. This firms the noodles and gives the cold-noodle texture. Drain thoroughly and toss lightly with 1 tsp sesame oil to keep from sticking.

    If using cucumber or other raw vegetables, julienne them now and set aside. Chop scallion whites and slice greens on bias; separate whites from greens.

Dressing

    In a medium bowl, whisk together the sesame paste and warm water until smooth and slightly runny. The warm water helps loosen the paste so it combines easily.

    Add soy sauce, black vinegar, sugar, sesame oil, and Szechuan chili oil to the sesame mixture. Whisk until fully combined and emulsified. Taste and adjust: add more chili oil for heat, soy for saltiness, or vinegar for brightness.

    Stir in the minced garlic, minced ginger, and the reserved 1–2 tbs of noodle cooking water (or up to the reserved 1/4 cup) to further loosen the dressing and help it coat the noodles. If using Szechuan pepper oil or crushed peppercorns, add them now.

Assemble & Season

    Place the cooled, drained noodles in a large mixing bowl. Pour the dressing over the noodles and toss vigorously with tongs or chopsticks until all noodles are evenly coated. If the sauce feels too thick, add a tablespoon of the reserved noodle water at a time until desired consistency is reached.

    Fold in the scallion whites, julienned cucumber (if using), and half of the chopped peanuts. Season with salt and white pepper; toss again and taste. Adjust soy/sugar/vinegar/salt as needed.

    Plate the noodles chilled or at room temperature. Garnish with scallion greens, remaining chopped peanuts, toasted sesame seeds, and a few cilantro leaves if desired. Drizzle an extra teaspoon of chili oil and/or a sprinkle of crushed Szechuan peppercorns over the top for more aroma and numbing heat.

Serve

    Serve immediately as a cold appetizer or light main. The noodles can be refrigerated in an airtight container up to 24 hours; toss briefly with a little water or extra sesame paste before serving if they stiffen.
