Poached Chicken

Prepare poaching liquid
In a medium saucepan or wide pot, combine 4 cups water or low-sodium chicken broth, halved green onions, sliced ginger, smashed garlic, 1 tsp kosher salt, and 1 tsp white or black pepper. Bring the liquid to a gentle simmer over medium heat.

Poach the chicken
Reduce heat so the liquid is barely simmering (small bubbles, not a rolling boil). Add the chicken breasts or thighs, making sure they are fully submerged. If needed, weigh them down with a small plate. Maintain a gentle simmer and cook until the internal temperature reaches 160-165°F (71-74°C) — about 12–18 minutes for breasts depending on thickness, 15–22 minutes for thighs.

Rest and shred or slice
Remove the chicken to a cutting board and let rest 5–8 minutes. Reserve the poaching liquid if desired for soup. Slice the chicken thinly against the grain or shred into bite-sized pieces. Season lightly with a pinch of salt if needed.
House Special Sauce

Combine base ingredients
In a small bowl, whisk together 3 tbsp soy sauce, 1 tsp dark soy sauce (if using), 1 tbsp rice vinegar, 1 tsp sugar or honey, 1 tsp chili oil, and 1 tsp sesame oil until the sugar dissolves.

Make peanut-sesame emulsion
Add 2 tbsp peanut butter and 2 tbsp warm water to the soy mixture. Whisk vigorously until smooth and slightly thickened. If too thick, add additional warm water 1 tsp at a time until desired consistency that will coat the chicken (pourable but substantial).

Aromatics and finish
Stir in 1 minced garlic clove, 1 tsp grated ginger, 1 tbsp toasted sesame seeds, 1 tsp lime or lemon juice, and 1 tbsp chopped cilantro (optional). Taste and adjust: more soy for saltiness, more lime for brightness, more chili oil for heat.
Assembly & Garnish

Arrange the sliced or shredded chicken on a platter or individual plates over a bed of cooked rice or steamed greens (2 cups cooked).

Spoon the house special sauce evenly over the warm chicken so it soaks into the meat. Use about two-thirds of the sauce, reserving some for serving.

Sprinkle 3 tbsp coarsely chopped toasted peanuts and 1 tsp toasted sesame seeds over the sauced chicken.

Scatter 2 sliced green onions and 2 tbsp cilantro leaves over the top. Finish with a pinch of salt to taste if needed and an extra drizzle of sesame oil or chili oil if desired.
