Preparation
1. Malt the Barley
Begin by soaking the Irish barley in water for about 24 hours. Afterward, drain the water and spread the barley on a flat surface. Allow it to germinate for 5-7 days, turning occasionally until sprouts appear. This process converts starches into fermentable sugars.
2. Dry the Malt
Once the barley has germinated, dry it in an oven at a low temperature (around 50°C or 122°F) for about 12 hours. This halts germination and prepares the malt for the mashing process.
3. Mash the Barley
Crush the dried malted barley and mix it with 2 liters of hot water in a mash tun. Allow it to steep for 1-2 hours at a temperature of around 65°C (149°F). Stir occasionally to ensure even extraction of sugars.
4. Ferment the Mash
After mashing, strain the mixture to separate the liquid wort from the solids. Transfer the wort to a fermentation vessel, add 1 tsp of yeast, and seal it. Let it ferment for about 5-7 days at room temperature until bubbling stops.
5. Distill the Liquid
Once fermentation is complete, transfer the liquid to a still. Distill it twice to achieve a smooth whiskey. Collect the distillate and discard any foreshots.
6. Age the Whiskey
Transfer the distilled whiskey into an oak barrel or container for aging. Let it age for a minimum of 3 years, during which time it will develop flavor and character.
7. Flavor the Whiskey
After aging, you can add 1 tbs of honey and 1 tbs of caramel to the whiskey for additional sweetness and flavor. Stir well to combine.
