Make the Meatballs

In a large bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, minced garlic, egg, parsley, salt, and black pepper. Mix until well combined. Form the mixture into small meatballs, about 1 inch in diameter.

Brown the Meatballs

In a large pot, heat olive oil over medium heat. Add the meatballs in batches and brown them on all sides. Remove the meatballs and set aside.

Sauté the Vegetables

In the same pot, add diced carrots and celery. Sauté for about 5 minutes until they begin to soften.

Add Broth and Spinach

Pour in the chicken broth and bring to a boil. Add the browned meatballs back into the pot, along with the fresh spinach. Simmer for 10-15 minutes until the spinach is wilted and the meatballs are cooked through.

Taste and adjust seasoning if necessary. Serve hot, garnished with extra Parmesan cheese and parsley if desired.
