Prepare the Chicken
Season the chicken breasts with salt, black pepper, and garlic powder. Drizzle with 1 tablespoon of olive oil and rub the seasoning into the meat. Let marinate for at least 15 minutes.
Grill the Chicken
Preheat the grill to medium-high heat. Place the marinated chicken breasts on the grill and cook for about 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from the grill and let rest.
Roast the Tomatoes
While the chicken is grilling, preheat the oven to 400°F (200°C). Toss the cherry tomatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 15-20 minutes until soft and slightly blistered.
Make the Vinaigrette
In a small bowl, whisk together the remaining olive oil and lemon juice. Season with salt and pepper to taste.
Assemble the Salad
On a serving plate, place a bed of mixed field greens. Slice the grilled chicken and arrange on top. Add the roasted tomatoes and drizzle with the lemon vinaigrette.
