Method

Prep and Brine (dry-brine)

Pat chicken dry

Remove any giblets from the cavity. Pat the whole chicken thoroughly dry inside and out with paper towels. Dry skin helps achieve crisp rotisserie skin.

Score and season cavity

Season the cavity lightly with 1/2 tablespoon kosher salt and a pinch of pepper. Insert the halved lemon (squeeze one half into the cavity first for juice), and tuck the rosemary sprigs inside if using.

Apply dry-brine and rub

In a small bowl combine 1 1/2 tablespoons kosher salt (reserve 1/2 tbsp for cavity used above), granulated sugar, black pepper, garlic powder, onion powder, smoked paprika, and dried thyme. Rub the olive oil or melted butter all over the chicken skin and under loose skin where possible. Massage the dry spice mix evenly over the exterior, rubbing some under the breast skin for flavor. Place the chicken uncovered on a rimmed tray and refrigerate for at least 2 hours, preferably overnight, to dry-brine and develop flavor.

Rotisserie Cooking (oven or rotisserie spit)

Preheat and prepare equipment

If using a rotisserie spit: preheat the rotisserie or grill to medium-high (around 375–425°F / 190–220°C). If using an oven with a rotisserie setting or a convection oven, preheat to 400°F (200°C). Place a drip pan under the rotisserie area and add 1 cup water (or a mixture of water and chicken stock) to catch drippings and keep the environment moist.

Truss and mount the chicken

Truss the legs together with cotton twine and tuck the wing tips behind the back to create a compact shape. Center the chicken on the spit rod so it is balanced; secure with forks or clamps per your rotisserie equipment instructions. If using a vertical rotisserie or oven rack, set the chicken breast-side out and ensure it rotates or sits so all sides cook evenly.

Cook time and monitoring

Rotate the chicken continuously on the rotisserie for even browning. Roast until an instant-read thermometer inserted into the thickest part of the breast reads 160°F (71°C) and the thigh reaches 175°F (79°C). For a 3.5–4.0 lb bird this typically takes 60–75 minutes depending on exact heat and device. Baste once halfway through with any accumulated pan juices or an additional 1 tablespoon melted butter if desired to encourage deep color.

Resting

When the target temperatures are reached, remove the chicken from the spit or oven and tent loosely with foil. Let rest for 10–15 minutes; during this time carryover cooking will raise the breast temperature to the safe 165°F (74°C). Resting also lets juices redistribute so the meat stays moist.

Portioning & Serving

Quartering the chicken

Place the rested chicken breast-side up on a cutting board. Use a sharp knife or poultry shears to separate into quarters: cut through the skin between breast and thigh to separate the leg quarter (thigh + drumstick) on each side; then halve the breast by cutting down the keel bone to make two breast quarters. For a 1/4 Chicken menu portion, plate one quarter per serving. For 1/2 Chicken, plate two quarters from the same side (breast + leg). For the 1/4 Chicken + Rib Combo, serve one chicken quarter alongside prepared ribs.

Finish and garnish

Sprinkle chopped fresh parsley over the pieces and serve with optional hot sauce or collected jus from the drip pan. Serve warm.

Storage

Refrigerate leftover carved chicken in an airtight container for up to 3–4 days. Reheat gently in oven at 300°F (150°C) covered to prevent drying or in a microwave with a splash of water.
