Trim and brine

Pat chicken thighs dry. In a large bowl combine buttermilk, 2 tbs hot sauce, garlic powder, onion powder, 1.5 tsp salt, and 1/2 tsp black pepper. Submerge chicken in the marinade, cover, and refrigerate at least 4 hours or overnight for best flavor.

Prepare breading

In a shallow dish or rimmed baking sheet whisk together flour, cornstarch, smoked paprika, cayenne, 1 tsp garlic powder, 1 tsp onion powder, 1.5 tsp kosher salt, and 1 tsp black pepper. Set aside.

Heat oil

Pour neutral oil into a heavy-bottomed Dutch oven or deep skillet to a depth of about 1.5 inches (about 1–1.5 cups depending on pan). Heat oil over medium-high to 350°F (175°C). If you don't have a thermometer, test with a small pinch of flour — it should sizzle steadily.

Dredge chicken

Remove chicken from the buttermilk, letting excess drip off. Working one piece at a time, press each thigh firmly into the flour mixture, coating thoroughly. For extra-crisp crust, double-dredge: dip coated piece back briefly into leftover buttermilk and re-coat in the flour mixture.

Fry until golden

Carefully lower chicken into the hot oil, skin side down, without crowding the pan (fry in batches). Maintain oil temperature at 325–350°F (160–175°C). Fry thighs for 12–15 minutes, turning once halfway, until internal temperature reaches 165°F (74°C) and crust is deep golden and crisp. Transfer to a wire rack set over a sheet pan to drain and rest for 5 minutes.

Hot Sauce Glaze

Make the glaze

While chicken rests, melt 4 tbs butter in a small saucepan over low heat. Whisk in 6 tbs hot sauce, 1 tbs honey, 1 tsp apple cider vinegar, 1/4 tsp cayenne, and 1/4 tsp salt until emulsified and slightly thickened, 1–2 minutes. Remove from heat.

Coat the chicken

Place fried chicken in a large bowl. Pour the warm hot sauce glaze over the pieces and toss gently to coat every piece evenly. For an extra-spicy finish, brush an additional tablespoon of hot sauce on top.

Spicy Slaw

Combine slaw ingredients

In a medium bowl combine shredded green cabbage, red cabbage, and grated carrot. In a separate small bowl whisk together mayonnaise, sour cream, 1 tbs hot sauce, 1 tbs apple cider vinegar, 1/2 tsp sugar, 1/2 tsp salt, 1/4 tsp black pepper, and 1/2 tsp red pepper flakes if using.

Toss and chill

Pour dressing over the shredded vegetables and toss to coat. Adjust seasoning to taste. Refrigerate at least 15 minutes so flavors meld; can be made up to 4 hours ahead. Drain any excess liquid before assembling sandwiches.

Assembly & Finish

Toast buns

Heat a skillet over medium heat. Spread butter on cut sides of buns and toast until golden, about 1–2 minutes per side.

Assemble sandwiches

Place 1 glazed chicken thigh on the bottom half of each bun. Top chicken with a generous scoop of spicy slaw, a few pickle slices, and pickled jalapeños if using. Crown with the top bun and serve immediately while hot and crispy.

Serve with extra hot sauce and a side of fries or potato salad. Provide napkins — this is a messy, bold handheld.
