Method
Cake batter (three-flavor sponge)
Prepare and preheat
Preheat oven to 350°F (175°C). Grease and line an 8x8-inch square baking pan with parchment paper leaving an overhang for easy removal; lightly grease the parchment.
In a medium bowl whisk together the all-purpose flour, baking powder, and salt until evenly combined. Set aside.
In a large mixing bowl, beat the eggs and granulated sugar with an electric mixer on medium-high speed for 4–6 minutes, until pale, thick, and ribbon-like when the beaters are lifted.
Fold in the dry flour mixture in two additions using a rubber spatula, mixing gently to avoid deflating the batter.
Divide the batter roughly into three equal portions right in the bowl using a measure or by eye. Transfer one third to a small bowl and stir the 2 tablespoons cocoa powder into it until fully incorporated to create the chocolate portion. Transfer another third to a second small bowl and stir in the lime zest to create the lime portion. Leave the remaining third plain (vanilla portion).
Spoon the three batters into the prepared pan in alternating lines or patches so they sit side by side (chocolate, vanilla, lime) without overmixing them together—this will give a subtle marbled 'three faces' effect. Smooth the top lightly with an offset spatula.
Bake in the preheated oven for 20–25 minutes, or until the top is golden and a toothpick inserted into the center comes out with a few moist crumbs (not wet batter). Remove from oven and let cool in the pan on a wire rack for 10 minutes.
Three milks soaking mixture (Tres leches)
While the cake cools, whisk together the evaporated milk, sweetened condensed milk, and whole milk (or half-and-half) in a medium bowl until smooth and uniform.
When the cake is completely cooled, place it on a shallow rimmed tray to catch drips. Using a skewer or fork, poke holes across the surface of the cake in a grid pattern (about 12–16 holes). Slowly pour the three-milk mixture evenly over the cake, starting at one corner and allowing the liquid to sink in before adding more. Pour in stages so the cake soaks but does not pool excessively. Cover and refrigerate for at least 2 hours, preferably 4 hours or overnight, so the cake fully absorbs the milks.
Whipped cream topping
Chill a mixing bowl and beaters in the freezer for 10 minutes to help the cream whip better.
Pour the heavy cream into the chilled bowl, add powdered sugar and 1 teaspoon vanilla. Beat on medium-high speed until medium-stiff peaks form, about 2–3 minutes—do not overbeat or it will become grainy.
Once the cake has soaked and is chilled, spread the whipped cream evenly over the top with an offset spatula in a smooth layer, or pipe decorative swirls if preferred.
Garnishes
Sprinkle the toasted flaked coconut along one edge of the cake, dust a light sweep of cocoa powder along another edge, and arrange fresh raspberries or sliced strawberries along the remaining third to represent the 'three faces' theme (chocolate, vanilla/coconut, and fruit).
To toast coconut: place flaked coconut in a dry skillet over medium heat and cook, stirring constantly, until golden and fragrant, about 3–4 minutes. Transfer immediately to a plate to cool.
If desired, garnish with thin lime slices or extra lime zest over the fruit section for brightness. Keep the cake refrigerated until serving.
