Brine (optional, recommended)
Prepare brine
In a container or large bowl, combine 4 cups water, 2 tbsp kosher salt, 2 tbsp brown sugar, 1 tsp whole peppercorns, and 1 bay leaf. Stir until salt and sugar dissolve.
Brine wings
Submerge the 8 wings in the brine, cover, and refrigerate for 1 to 2 hours. Do not exceed 4 hours to avoid overly soft skin. After brining, remove wings, rinse briefly under cold water, and pat completely dry with paper towels.
Prep & Season
If not brining, pat wings dry and proceed. Season wings evenly with 1.5 tsp kosher salt and 1 tsp freshly ground black pepper.
If using the Dry Rub: combine 1 tbsp paprika, 1 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp cayenne, and 1 tbsp packed brown sugar in a small bowl. Rub the mixture evenly onto each wing, coating all sides. Let sit at room temperature 20–30 minutes to take the chill off while you prepare the smoker.
Smoking
Preheat smoker to 225°F (about 107°C). Use mild wood for poultry (apple, cherry, or pecan) and ensure a steady low smoke.
Arrange wings on the smoker rack in a single layer with space between pieces. Smoke at 225°F for 60–75 minutes, until an internal temperature reaches 155–160°F (use an instant-read thermometer). The goal is to impart smoke flavor and start rendering the fat without fully crisping the skin.
Remove wings from smoker and let rest on a tray 5–10 minutes while you heat oil for flash-frying.
Flash-Fry
Pour 2 cups neutral oil into a heavy deep skillet or Dutch oven. Attach a thermometer and heat oil to 375°F (190°C). Maintain temperature within ±10°F while frying.
Use a slotted spoon or spider to remove wings and drain on a wire rack set over a baking sheet or on paper towels for a minute to remove excess oil.
Saucing & Finishing
Choose your seasoning or sauce: toss wings in 1/2 cup Buffalo sauce (hot sauce + melted butter) for classic Buffalo; or in 1/2 cup Honey BBQ for sticky-sweet; or brush with 1/2 cup Garlic-Parsley Butter (melted butter with 1 tsp minced garlic and 1 tbsp chopped parsley) for a savory finish. Place wings in a large bowl, pour chosen sauce over them, and toss gently to coat evenly.
Alternatively, leave wings un-sauced and sprinkle extra dry-rub or finishing salt to taste if serving multiple sauce options.
