Comeback Sauce

Make sauce

In a medium bowl combine mayonnaise, ketchup, sweet paprika, hot sauce, Worcestershire or Creole sauce, prepared horseradish, minced shallot, lemon juice and smoked paprika if using. Whisk until smooth. Season with salt and black pepper, taste and adjust balancing sweetness, acid, heat as desired. Refrigerate at least 30 minutes to let flavors marry (can be made up to 2 days ahead).

Form patties

Divide the 1 lb ground beef into 4 portions (each about 4 oz) for thinner patties or 2 portions for thicker — this recipe assumes 4 patties for 4 buns. Lightly shape into patties about 3.5–4 inches wide and about 1/2 inch thick. Make a shallow dimple in the center of each patty with your thumb to prevent puffing while cooking. Do not overwork the meat.

Season

Just before cooking, season both sides of each patty generously with kosher salt and freshly ground black pepper.

Cook patties

Heat a large skillet or cast-iron pan over medium-high heat until very hot. Add 1 tablespoon vegetable oil and swirl to coat. Add patties (do not crowd; cook in batches if necessary). Cook undisturbed 3 minutes on the first side until a deep brown crust forms. Flip and cook 2–3 minutes more for medium (adjust time for desired doneness). During the last 30–45 seconds of cooking, place a slice of Tillamook cheddar on each patty and cover the pan briefly to melt the cheese.

Rest

Transfer cooked patties to a plate and let rest 2–3 minutes while you toast the buns and assemble.

Buns & Assembly

Toast buns

Spread softened butter on cut sides of the buns. Heat a clean skillet or griddle over medium heat and toast the buns, buttered side down, until golden and crisp, about 1–2 minutes. Remove from heat.

Assemble burgers

Spread about 1 to 2 tablespoons of Comeback Sauce on the bottom half of each toasted bun. Place a cheesy steak patty on top of the sauce. Add a small handful (about 1/2 cup) of shredded lettuce over the cheese, then layer 2–3 slices of tomato and optional red onion and pickles if using. Spread an additional teaspoon of Comeback Sauce on the top bun (optional) and close the burger.

Serve

Serve immediately while hot with extra Comeback Sauce on the side. Yield: 4 burgers. Estimate cook + prep time is listed below.
