Cook sausage
Place a large nonstick or cast-iron skillet over medium heat. Add the breakfast sausage, breaking it up with a spatula. Cook 6–8 minutes, stirring occasionally, until no pink remains and edges are browned. If the sausage releases excess grease, tilt the pan and spoon off all but about 1 tablespoon for flavor.
Scramble eggs
While the sausage cooks, crack the eggs into a medium bowl. Add the milk, salt, and pepper. Whisk until blended and slightly frothy. Push the cooked sausage to one side of the skillet (or remove to a plate and keep warm). Reduce heat to medium-low and add butter to the cleared space. Pour in the egg mixture. Let set briefly, then gently stir with a spatula, folding the eggs until soft curds form and eggs are just set but still moist, about 2–3 minutes.
Assembly & Cheese
Lay a warm tortilla flat. Spoon about 1/4 of the sausage-and-egg mixture down the center of the tortilla, leaving space at the edges. Sprinkle about 3/8 cup (approximately 1/4 to 1/3 cup) shredded Monterey Jack cheese over the filling so it melts from the residual heat. If using optional add-ins (potatoes, avocado, jalapeños), add desired amounts now.
Fold the burrito: fold the left and right sides over the filling, then roll from the bottom edge up, tucking as you go to form a tight cylinder. Place seam-side down on a cutting board to hold shape.
Serve immediately with sour cream, salsa, and chopped cilantro. If adding avocado, garnish on top or serve on the side.
