    Prepare the Potatoes

    Wash and peel the russet potatoes, then cut them into thin strips to form fries.

    Soak the Potatoes

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the fries in batches to the hot oil. Fry until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels.

    Season the Fries

    While the fries are still hot, sprinkle with salt and pepper to taste.

    Load the Fries

    Top the fries with shredded cheddar cheese, bacon bits, green onions, and jalapeños. Drizzle with sour cream.
