Cook and prepare lobster

If using live lobster: bring a very large pot of heavily salted water to a rolling boil. Plunge lobster headfirst and cook 8–10 minutes for 1.5–2 lb lobster until shell is bright red and internal temperature ~135–140°F. Transfer to an ice bath to stop cooking. Remove meat from the tail and claws; reserve shells and juices. Chop meat into bite-size pieces. If using precooked lobster, remove from shell and cut into bite-size pieces and keep chilled.

Reserve any cooking liquid (if used) to add a splash to the sauce later for lobster flavor. Keep lobster meat warm by briefly tossing with 1/2 tbs butter right before adding to the noodles, or gently reheat at the end for 30–60 seconds in the pan.

Noodles & Sauce

Soak rice noodles

Place rice noodles in a large bowl and cover with warm (not boiling) water for 15–25 minutes until pliable but slightly undercooked — they will finish cooking in the wok. Drain and toss with a few drops of oil to keep from sticking.

Make tamarind sauce

In a small bowl, whisk together tamarind paste, palm sugar, fish sauce, soy sauce, and 4 tbs water until sugar dissolves and mixture is smooth. Taste for balance — it should be tangy, slightly sweet, and salty. Adjust with up to 1 tbs more sugar or 1 tbs fish sauce as needed.

Prepare tofu

Heat 1 tbs neutral oil in a nonstick skillet over medium-high heat. Add tofu cubes and pan-fry until golden and crisp on multiple sides, about 6–8 minutes. Season lightly with 1/8 tsp salt. Remove and set aside.

Cook aromatics

In a large wok or wide skillet, heat remaining 1 tbs oil over high heat until shimmering. Add shallot and minced garlic; stir-fry 30–45 seconds until fragrant but not brown.

Assembly & Stir-fry

Stir-fry noodles

Push aromatics to one side of the wok. Add the drained rice noodles to the center, then pour the tamarind sauce over noodles. Using tongs or spatulas, toss and press noodles gently against the wok so sauce coats and noodles begin to soften and finish cooking, about 2–3 minutes. If the pan looks dry, add 1–2 tbs reserved lobster cooking liquid or water to help steam and loosen the noodles.

Add eggs

Move noodles to the side, add a bit of oil if needed, crack the eggs into the empty space and scramble quickly until just set, then toss with the noodles so eggs are distributed in ribbons.

Add tofu, bean sprouts, chives, and lobster

Add the fried tofu, bean sprouts, and most of the chives to the wok. Toss quickly 30–60 seconds until bean sprouts crisp-tender. Add the lobster meat and gently fold to combine; toss only briefly to warm lobster through (30–45 seconds). Season with pepper and taste for salt; add up to 1 tbs fish sauce or 1/2 tsp salt if needed.

Eggs & Garnish

Finish and serve

Transfer the lobster Pad Thai to warmed serving plates. Sprinkle with chopped roasted peanuts, remaining chives, and chili flakes to taste. Serve with lime wedges on the side so diners can squeeze fresh lime over each portion.

Optional: For a richer finish, dot with the remaining 1/2 tbs butter over hot noodles before serving. Serve immediately.

Seasoning

Throughout cooking: taste and adjust seasoning — tamarind mixture should remain balanced (tart/sweet/salty). Add small amounts of water if sauce becomes too thick, or additional palm sugar or fish sauce to rebalance.
