Heat a nonstick skillet or wok over medium-high heat. Add 1 tablespoon vegetable oil and swirl to coat.

Add minced garlic and minced ginger; stir-fry 15–20 seconds until fragrant, taking care not to burn.

Add julienned carrot and sliced red bell pepper. Stir-fry 1–2 minutes until slightly softened.

Add thinly sliced cabbage and bean sprouts and continue to stir-fry 1–2 minutes until cabbage softens but remains slightly crisp.

Stir in sliced scallion, 1 tablespoon soy sauce, 1/2 teaspoon sesame oil, 1/4 teaspoon white pepper and 1/8 teaspoon salt. Toss to combine and cook 30 seconds to 1 minute until liquid mostly evaporates.

Taste and adjust seasoning: add a few drops more soy sauce if needed. Transfer filling to a bowl and let cool to lukewarm (5–10 minutes). Excess moisture will make wrappers soggy—if filling seems wet, drain briefly in a fine-mesh sieve or blot with paper towel.

Wrappers & Assembly

Prepare a small cornstarch slurry by mixing 1 teaspoon cornstarch with 1 teaspoon water until smooth; set aside. This will act as the glue for sealing the rolls.

Place one spring roll wrapper on a clean work surface in a diamond orientation (one corner pointing toward you). Keep the other wrappers covered with a damp towel so they don’t dry out.

Spoon about 3 heaping tablespoons (≈ 1/4 cup) of the cooled vegetable filling onto the lower third of the wrapper, slightly off-center: leave a 1/2-inch border on the sides and about 1 inch from the bottom corner.

Fold the bottom corner up over the filling, then fold the left and right corners toward the center snugly, forming an envelope. Continue rolling away from you to the top corner, keeping the roll tight but not tearing the wrapper. Brush the top corner edge with a little cornstarch slurry and press to seal. Repeat with remaining wrappers and filling to make 3 rolls.

Cooking

Pour about 1/2-inch (≈ 1 cup) neutral oil into a heavy skillet and heat over medium-high until shimmering and a small piece of wrapper sizzles immediately (about 350°F / 175°C).

Working in a single layer (do not overcrowd), gently add the spring rolls seam-side down. Fry, turning occasionally, until golden brown and crisp on all sides, about 2–3 minutes per side (total 4–6 minutes). Adjust heat to maintain a steady sizzle but avoid burning.

Use a slotted spoon or spatula to transfer cooked rolls to a paper towel–lined plate to drain briefly.

For a lighter option: brush rolls with oil and bake on a parchment-lined tray at 425°F (220°C) for 12–15 minutes, turning once, until crisp and golden.

Sauce & Serve

If using optional lime, stir 1/2 teaspoon lime juice into 1/4 cup sweet chili sauce. Taste and adjust.

Cut each spring roll in half on the diagonal or serve whole. Plate 3 rolls (or 6 halves) with the sweet chili sauce on the side for dipping.

Garnish (optional): a few extra sliced scallions or cilantro sprigs. Serve immediately while hot and crisp.
