Prepare wings

Preheat oven to 425°F (220°C). Pat the wings very dry with paper towels. If wings are whole, cut into drumettes and flats and discard or save tips for stock. Place wings in a large bowl.

Season and coat

Sprinkle the kosher salt, black pepper, and baking powder over the wings. Toss thoroughly to coat each wing evenly. The baking powder helps dry and crisp the skin in the oven. Lightly oil a wire rack set over a rimmed baking sheet or lightly oil the baking sheet itself to prevent sticking.

Bake

Arrange wings skin-side up on the rack or sheet in a single layer with space between pieces. Bake in the preheated oven for 25 minutes. After 25 minutes, flip each wing and bake an additional 15–20 minutes until skin is golden-brown and crisp and internal temperature reaches 165°F (74°C). Total baking time ≈ 40–45 minutes depending on wing size and oven.

For extra crispness, switch oven to broil for 2–3 minutes after baking, watching closely to avoid burning.

Make or combine sauce

While wings bake, combine the store-bought sweet chili sauce, honey, rice vinegar, soy sauce, lime juice, minced garlic, and red pepper flakes or sriracha (if using) in a small bowl. Stir until smooth and taste; adjust sweetness, acidity, or heat to preference. If using only store-bought sauce, this step enhances flavor; if making entirely from scratch, whisk until evenly combined.

Warm sauce (optional)

For a slightly thinner glaze, warm the sauce gently in a small saucepan over low heat for 1–2 minutes, stirring, then remove from heat. Cooling will thicken slightly.

Toss wings in sauce

When wings are done, transfer them to a large bowl. Pour the prepared sweet chili sauce over the hot wings and toss gently but thoroughly so each wing is evenly glazed.

Plate and garnish

Arrange glazed wings on a serving platter. Sprinkle with toasted sesame seeds and sliced scallions if desired. Serve immediately with extra sweet chili sauce on the side for dipping.
