Prepare the Lamb

Preheat your oven to 400°F (200°C). In a bowl, mix olive oil, minced garlic, salt, and black pepper. Rub this mixture all over the rack of lamb.

Sear the Lamb

Heat a skillet over medium-high heat. When hot, sear the rack of lamb on all sides until browned, about 2-3 minutes per side.

Roast the Lamb

Transfer the rack of lamb to a roasting pan. Roast in the preheated oven for about 20-25 minutes for medium-rare, or until desired doneness.

Make the Rosemary Sauce

In the same skillet used for searing, add Douro red wine and bring to a simmer, scraping up any brown bits from the bottom. Add rosemary and butter, stirring until the sauce thickens slightly.

Serve

Remove the lamb from the oven, let it rest for 10 minutes before slicing. Serve with the red wine rosemary sauce drizzled over the slices.
