Prepare the Pears
Peel the pears, leaving the stems intact. Cut a small slice from the bottom of each pear to help them stand upright.
Make the Poaching Liquid
In a large saucepan, combine the Madeira wine, granulated sugar, citrus zest, saffron threads, cinnamon stick, and water. Stir well to dissolve the sugar.
Poach the Pears
Bring the mixture to a gentle simmer over medium heat. Carefully add the pears to the saucepan, ensuring they are submerged in the liquid. Reduce the heat to low and cover the pan. Poach the pears for about 20-25 minutes, or until they are tender but still hold their shape.
Cool and Serve
Once the pears are poached, remove them from the liquid and let them cool slightly. You can serve them warm or chilled, drizzled with some of the poaching liquid.
