Preparation
Prepare the Pears
Peel the pears, leaving the stems intact. Cut a small slice off the bottom of each pear to help them stand upright.
Prepare the Poaching Liquid
In a large saucepan, combine the Madeira wine, water, cinnamon stick, saffron threads, orange zest, lemon zest, orange juice, lemon juice, and sugar. Stir to dissolve the sugar.
Cooking
Poach the Pears
Bring the poaching liquid to a gentle simmer over medium heat. Carefully add the pears to the simmering liquid, standing them upright. Cover and simmer for about 20-25 minutes, or until the pears are tender but not falling apart.
Cool and Serve
Once the pears are cooked, remove them from the poaching liquid and let them cool slightly. Serve warm or chilled, drizzled with some of the poaching liquid.
