Prepare the Vegetables

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced fennel, julienned carrot, and sliced bell pepper. Season with salt and pepper. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.

Sear the Fluke

In a separate pan, heat the remaining tablespoon of olive oil over medium-high heat. Pat the fluke fillets dry with paper towels and season with salt and black pepper. Place the fillets in the hot pan and sear for about 3-4 minutes on each side until golden brown and cooked through.

Combine and Finish

Once the fluke is cooked, remove it from the heat. In the skillet with the vegetables, add the orange juice and orange zest, stirring to combine. Cook for an additional 1-2 minutes to heat through. Serve the fluke on a plate topped with the sautéed vegetables and garnish with chopped cilantro.
