Preparing the Lobster

Cook the Lobster

Bring a large pot of salted water to a boil. Add the lobsters and cook for about 8-10 minutes. Remove from water and allow to cool. Once cool, remove the meat from the claws and tails, and chop into bite-sized pieces.

Sauté the Lobster

In a skillet, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Add lobster meat, lemon juice, salt, and pepper. Cook for another 3-4 minutes until heated through. Remove from heat and set aside.

Making the Saffron Risotto

Prepare the Broth

In a saucepan, heat the broth and add the saffron. Keep warm over low heat.

Sauté Onions

In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 4-5 minutes.

Cook the Rice

Add Arborio rice to the pot and stir for 1-2 minutes until the rice is lightly toasted. Pour in the white wine and cook, stirring constantly, until absorbed.

Add Broth Gradually

Begin adding the warm saffron broth, one ladle at a time, stirring constantly. Wait until the liquid is absorbed before adding the next ladle. Repeat for about 18-20 minutes or until the rice is creamy and al dente.

Finish the Risotto

Stir in the grated Parmesan cheese and season with salt and pepper to taste.

Spoon the saffron risotto onto plates and top with the sautéed lobster. Serve immediately and enjoy!
