Cake
Preheat Oven
Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
Mix Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
Cream Butter and Sugar
In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
Add Eggs and Lemon
Add the eggs, one at a time, mixing well after each addition. Then add the lemon juice and lemon zest.
Combine Mixtures
Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined.
Bake
Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes or until a toothpick comes out clean.
Cool
Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Rose Sabayon
Prepare Sabayon
In a heatproof bowl, whisk together egg yolks and sugar until pale and creamy.
Add Wine
Gradually whisk in the white wine or rosé.
Add Rose Water
Remove from heat and stir in the rose water.
Fold in Whipped Cream
Gently fold in the whipped cream until fully incorporated. Serve warm or chilled.
