For the Salmon

Method

For the Salmon

1

Prepare the Salmon

In a bowl, mix together olive oil, parsley, dill, thyme, garlic, salt, and black pepper. Brush this mixture over the salmon fillets.

2

Grill the Salmon

Preheat the grill to medium-high heat. Place the salmon fillets skin-side down on the grill. Cook for about 5-6 minutes on each side, or until the fish flakes easily with a fork.

For the Plum Chutney

3

Cook the Chutney

In a saucepan, combine chopped plums, onion, brown sugar, apple cider vinegar, grated ginger, cinnamon, and salt. Bring to a boil over medium heat, then reduce to a simmer. Cook for about 20-25 minutes, stirring occasionally, until the mixture thickens.

4

Serve

Remove the chutney from heat and let it cool slightly. Serve the grilled salmon with a generous spoonful of plum chutney on top.
