Make the crust

Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and brown sugar until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool.

Prepare the cheese cake filling

In a large bowl, beat the cream cheese until smooth. Add brown sugar, sour cream, and vanilla extract, mixing until combined. Add the eggs one at a time, mixing well after each addition. Pour the filling over the cooled crust.

Bake the cheese cake

Bake in the preheated oven for 45-50 minutes, or until the center is set and slightly jiggles. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

Caramel Chocolate Cream

Prepare the topping

In a small saucepan, heat the heavy cream over medium heat until it starts to simmer. Remove from heat and add chocolate chips, stirring until melted and smooth. Add caramel sauce and mix until well combined.

Assemble the cheesecake

Once the cheesecake has cooled, pour the caramel chocolate cream over the top. Chill in the refrigerator for at least 4 hours or overnight before serving.
