Preparation of Wild-Caught Sole Meunière

Prepare the Sole

Season the sole fillets with salt and black pepper on both sides. Dredge each fillet in all-purpose flour, shaking off the excess.

Cook the Sole

In a large skillet, melt 4 tablespoons of butter over medium heat. Once the butter is foamy, add the floured sole fillets. Cook for about 3-4 minutes on each side, or until the fish is golden brown and cooked through. Remove the fillets and place them on a warm plate.

Make the Sauce

In the same skillet, add the remaining 2 tablespoons of butter and allow it to brown slightly. Add the lemon juice and chopped parsley, stirring to combine.

Serve

Pour the brown butter sauce over the sole fillets and serve immediately.
