Preparation
Prepare the Whitefish Salad
In a large bowl, combine the flaked whitefish, mayonnaise, chopped celery, red onion, Dijon mustard, lemon juice, salt, and black pepper. Mix well until all ingredients are fully incorporated.
Form the Timbale
Line small bowls or ramekins with plastic wrap. Fill each bowl with the whitefish salad mixture, pressing down to pack it tightly. Cover with plastic wrap and refrigerate for at least 1 hour.
Prepare Wontons
Preheat the oven to 375°F (190°C). Cut wonton wrappers into triangles. Place them on a baking sheet and lightly brush with oil. Bake for 8-10 minutes or until crispy and golden.
Assemble the Dish
To serve, carefully unwrap each timbale and invert onto a plate. Surround with crispy wontons and garnish with pickled onions and fresh dill.
