Prepare the Chicken

Preheat the oven to 425°F (220°C). In a bowl, mix olive oil, chopped rosemary, minced garlic, salt, and black pepper. Rub this mixture all over the halved chicken, ensuring it's well coated.

Roast the Chicken

Place the chicken halves skin-side up on a roasting pan. Pour the chicken broth into the bottom of the pan. Roast in the preheated oven for about 45-55 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown.

Rest and Prepare Jus

Remove the chicken from the oven and let it rest for 10 minutes. Meanwhile, place the pan with drippings over medium heat on the stove. Scrape the bottom of the pan to release any bits. Simmer for about 5-7 minutes to reduce the jus slightly.

Serve

Carve the chicken and serve it with the natural jus. Pair with mashed potatoes on the side.
