Prepare fillets
Pat the trout fillets very dry with paper towels (both sides and the skin). Season both sides lightly with kosher salt and freshly ground black pepper. Sprinkle the flesh side with the 2 tablespoons of flour and gently pat to adhere — this creates a slightly drier surface for better browning. Shake off any excess flour.

Heat the pan
Place a large nonstick or stainless-steel skillet over medium-high heat. Add 1 tablespoon neutral oil and 1 tablespoon butter. Heat until the oil shimmers and the butter foams but does not burn.

Sear skin-side down
Carefully place the trout fillets into the hot skillet, skin-side down. Press each fillet gently with a spatula for 10–15 seconds to ensure the skin makes even contact with the pan and does not curl. Cook skin-side down until the skin is crisp and deep golden, about 3–4 minutes depending on thickness.

Finish quickly
Flip the fillets and cook the flesh side for 30–60 seconds more, spooning some pan fat over the top to finish cooking (the internal temperature should be about 125–130°F / 52–54°C for medium). Transfer fillets to a warm plate and tent loosely with foil while you make the brown butter sauce.

Brown the butter
In the same pan (wipe it if there are excessive burnt bits, but keep the fond), reduce heat to medium. Add 6 tablespoons unsalted butter. Swirl or stir the butter continuously as it melts. After a few minutes the butter will foam, then the milk solids will begin to brown and give a nutty aroma. Watch carefully — once it turns a deep golden-brown (not black), remove the pan from direct heat to prevent burning. Total browning time is about 3–4 minutes.

Deglaze and flavor
Return the pan to low-medium heat. Add 2 tablespoons white wine or chicken broth to deglaze, scraping up any browned bits from the bottom. Stir in the rinsed capers and 1 tablespoon fresh lemon juice. Allow the liquid to reduce slightly for 30–45 seconds.

Finish sauce
Off the heat, whisk in 2 tablespoons chopped parsley and 1 teaspoon fresh thyme leaves (if using). Taste and adjust seasoning with a small pinch of salt and a few grinds of black pepper if needed. If the sauce seems too thick, add up to 1 tablespoon warm water or broth to loosen slightly.
