    Prepare glass

    Chill a coupe or Nick & Nora glass by filling it with ice water or placing it in the freezer for a few minutes.

    Measure and combine

    In a mixing glass or cocktail shaker filled about two-thirds with ice, add 1 oz London dry gin, 1 oz sweet vermouth, and 1/4 oz Fernet-Branca.

    Stir

    Stir the mixture briskly for 20–30 seconds (about 25–30 full revolutions) until well chilled and slightly diluted. Aim for a properly cold, slightly viscous texture.

    Strain

    Discard the ice water from the chilled serving glass if used. Double-strain (or fine-strain) the cocktail from the mixing glass into the chilled coupe using a Hawthorne or julep strainer and, optionally, a fine mesh strainer to remove tiny shards of ice.

    Garnish

    Express the oils of an orange peel over the surface of the cocktail by holding the peel skin-side down about 3–4 inches above the drink and giving it a firm twist. Run the peel around the rim, then drop it into the drink (or perch it on the rim).

    Serve immediately. The Hanky Panky is an equal-parts, aromatic, bitters-forward stirred cocktail—sip slowly.
