    Chill glass

    Place a Champagne flute (or coupe) in the freezer or fill it with ice water while you prepare the cocktail to ensure it stays cold. Let sit 2–5 minutes, then discard ice water if used.

    Combine base ingredients

    In a cocktail shaker, add 1.5 oz gin, 0.75 oz freshly squeezed lemon juice, and 0.5 oz simple syrup. Fill the shaker with ice (about 1 cup) so the liquid is well chilled.

    Shake

    Secure the shaker top and shake vigorously for 10–15 seconds until the outside of the shaker is frosty and the mixture is well chilled.

    Strain

    Double-strain (using the shaker strainer and, if available, a fine mesh strainer) the contents into the chilled Champagne flute to remove ice shards and pulp. Fill the flute only about two-thirds full to leave room for sparkling wine.

    Top with sparkling wine

    Gently pour 3 oz chilled Champagne or dry sparkling wine down the side of the glass to preserve effervescence. Pour slowly to avoid foaming over.

    Garnish and serve

    Express a lemon twist over the surface of the drink to release oils, then run it around the rim and drop it into the flute (or perch on the rim). Serve immediately.
