Prepare oven and pastry
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Lightly flour your work surface (about 1 tablespoon) to prevent sticking. If using frozen puff pastry, ensure it is fully thawed but still cold.
Trim and optionally hollow the Brie
If the Brie is very tall, trim a thin slice from the top rind so it sits flat. For a gooey center and to allow room for a touch of honey and herbs, you can hollow out a 1/4-inch shallow circle from the top center of the cheese using a small spoon — this is optional.
Add flavor to the Brie
Place the Brie on a piece of parchment. Drizzle about 1 tablespoon of honey over the top (and into the hollow if you made one). Sprinkle the thyme leaves and press 1 rosemary sprig lightly onto the honeyed top (if using). If you want nuts inside, sprinkle the chopped toasted walnuts or pecans across the top/hollow now.
Wrap the Brie
Roll out the puff pastry slightly on the floured surface so it is large enough to fully encase the Brie (about 1/8-inch thickness). Place the cheese in the center of the pastry. Fold the pastry up around the cheese, pleating as needed to seal. Trim any excess pastry, leaving a small seam on the bottom. Press gently to seal and tuck under so the wheel sits flat. Transfer the wrapped Brie seam-side down to the prepared baking sheet.
Bake
Bake in the preheated oven for 20–25 minutes until the pastry is deep golden brown and puffed. Rotate the pan halfway through baking for even color. Watch carefully after 18 minutes — timing will vary with oven and pastry thickness. Internal cheese should become soft and runny.
Rest briefly
Remove from oven and allow the Brie en croûte to rest on the baking sheet for 5 minutes — this helps the cheese settle and makes slicing/serving easier.
Prepare fruit and finish
While the Brie is baking or resting, arrange the fresh fruit (about 2 cups: berries, thinly sliced pear or apple, and halved grapes) on a serving platter. Drizzle the remaining 3 tablespoons of honey lightly over the fruit, and scatter the remaining rosemary sprig leaves or extra thyme if desired. Sprinkle a small pinch of sea salt over the fruit and nuts to enhance flavor.
