If stored warm, chill the bottle to serving temperature. Aim for 16–18°C (61–64°F). Place bottle in refrigerator for 30–45 minutes if too warm, or in an ice bucket with equal parts ice and water for 10–15 minutes. Use a wine thermometer to verify temperature.

Chill and check

Using a waiter’s corkscrew, cut the capsule below the lip, remove the foil, and gently ease out the cork. Inspect the cork briefly for any off smells or signs of fault; the wine should smell clean and varietally red-fruited.

Open the bottle

To reveal the wine’s fruit-forward and fresh profile and to soften tannins, decant the bottle for 30–60 minutes. Pour slowly into a decanter in one steady motion. If the wine is already showing bright fruit and soft tannins, a short 15–20 minute aeration in the glass is sufficient.

Decant (optional)

Pour approximately 120–150 ml (4–5 oz) per glass — fill to the widest part of the bowl to allow aromas to collect. Serve at 16–18°C (61–64°F).

Prepare a small board or plates with the berries, charcuterie, cheese and bread/crackers. Slice the cheese into thin wedges or bite-sized pieces. Arrange charcuterie folded or rolled for easy picking. Place berries in a small bowl or scatter on the board; they echo the wine’s black and red fruit aromas.

When serving, suggest tasting the wine first to note the black and red berry character, then sample with small bites of cheese or charcuterie to observe how the wine’s soft tannins and moderate acidity interact with fat and salt.

Use the wine thermometer to confirm the serving temperature. Use the timer to track decanting or chilling intervals so you don’t over-aerate or over-chill the wine.
