Preparation Steps
Prepare the Chicken
Preheat your oven to 375°F (190°C). Place chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch.
Season and Breading
Season the chicken with salt and black pepper. Set up a breading station: place flour in one bowl, beaten eggs in another, and mix breadcrumbs with grated Parmesan in a third bowl. Dredge each chicken breast in flour, dip into the egg, then coat with the breadcrumb mixture.
Fry the Chicken
In a large skillet, heat olive oil over medium-high heat. Add the breaded chicken cutlets and cook for about 3-4 minutes on each side until golden brown. Remove from skillet and place on a paper towel to drain excess oil.
Assemble and Bake
In a baking dish, spread a layer of marinara sauce. Place the fried chicken on top, spoon more marinara sauce over each piece, and sprinkle shredded mozzarella on top. Bake in the preheated oven for about 20 minutes or until the cheese is bubbly and golden.
Serve
Remove from the oven and let cool for a few minutes. Serve hot with pasta or a salad.
