Combine equal parts honey and hot water (for this recipe 1 tablespoon honey + 1 tablespoon hot water). Stir until fully combined and cool before measuring 0.25 oz for the cocktail.
Mixing the Vermenter

Fill a cocktail shaker with about 1 cup of fresh ice.

Add 2 tablespoons (1 oz) dry vermouth to the shaker. The Vermenter emphasizes the aromatics of vermouth, so use a good-quality dry vermouth and pour it first to coat the ice and help meld flavors.

Add 2 oz gin, 0.5 oz bright citrus liqueur, 0.5 oz fresh lemon juice, 0.25 oz honey syrup, and 2 dashes of orange bitters to the shaker.

Cap the shaker and shake vigorously for 10–12 seconds until the shaker is cold to the touch and the mixture is well-aerated and slightly diluted (this balances the vermouth and honey).
